What makes a good mentor and mentee?

ScienceDaily (Nov. 30, 2012) ? How-to books are full of advice on what makes a good mentor. But what makes a good mentee and what chemistry is needed to make the relationship work?

People being mentored should be open to feedback and be active listeners, according to a new research paper. They should also be respectful of their mentor's time, including being on time and prepared for meetings.

And it helps to follow at least some of their advice.

"Successful mentorship is vital to career success and satisfaction for both mentors and mentees," said Dr. Sharon Straus, a researcher at St. Michael's Hospital and author of the paper published online in Academic Medicine.

Dr. Straus examined mentor-mentee relationships at two large academic health centres, the University of California, San Francisco, School of Medicine and the University of Toronto Faculty of Medicine, where she is director of the Division of Geriatric Medicine. She said she believes this was the largest qualitative study on mentoring that has been conducted and was unique in including participants from both Canada and the United States.

While her focus was on teaching hospitals, she said many of her findings could apply to other professions.

Her paper identified five key ingredients necessary for a successful mentoring relationship: reciprocity, mutual respect, clear expectations, personal connections and shared values. Failed relationships were characterized by poor communication, lack of commitment, personality differences, perceived or real competition, conflicts of interest and the mentor's inexperience.

Faculty members interviewed for her study said mentees need to take their mentors' advice seriously. They don't have to accept every word, but if they ignore most of the advice, it's a fruitless relationship.

Good mentors were said to be honest, trustworthy and active listeners, meaning they were engaged with the mentee during each session, focused on the issues identified by the mentee and helped the mentee set goals. The good ones also had a network of colleagues and collaborators who could open doors for their mentees, help jump-start their careers or just explain how the system works. In addition to providing career advice, they also helped their mentees achieve the elusive work-life balance.

"One of the key challenges for mentors and mentees is a lack of time and participants stated that the effective mentors ensured that they remained accessible to their mentees even if they were located at a distance," Dr. Straus said. "Although they may not be able to meet in person regularly, effective mentors used email and phone contact to ensure accessibility."

Good mentors also warned mentees of potential pitfalls. One mentee described this role as being like a "guardian angel [who] prevents you from hitting yourself when you know something is falling from the sky."

Previous studies have found that effective mentorship produces university faculty who are more productive (including obtaining more grants and publications than non-mentored colleagues), are promoted more quickly and are more likely to stay at their institutions. Given the importance of mentoring, she recommends training programs focusing on promoting the characteristics of effective mentoring.

But what do you do if the mentoring relationship just isn't working?

Dr. Straus said strategies include using a mentorship facilitator or the department chair as a mediator, implementing a "no-fault divorce" rule whereby either side can end the relationship.

Dr. Straus is also director of knowledge translation at the Li Ka Shing Knowledge Institute of St. Michael's Hospital. Knowledge translation is the process of incorporating the best available evidence into practice, education and decision-making.

Upton headed to Braves; Pettitte returns to Yanks

B.J. Upton is on his way to Atlanta, while Andy Pettitte is staying in pinstripes.

With the winter meetings only days away, baseball's offseason began to heat up Wednesday with a pair of moves involving potential closers: Ryan Madson joined the Angels and Jonathan Broxton remained with the Reds.

Hours later, the Braves made big news.

Looking for a new center fielder and some right-handed pop, Atlanta found both in Upton, who had 28 homers and 31 steals for Tampa Bay last season. The fleet-footed free agent agreed to a $75.25 million, five-year contract, a person familiar with the deal said Wednesday night.

The person spoke to The Associated Press on condition of anonymity because the deal had not been completed. It was expected to be announced Thursday once Upton passes his physical.

Upton's score would be the biggest free-agent contract of the offseason so far and the largest in Braves history.

Pettitte, meanwhile, will return for another season with the New York Yankees.

Feeling strong at age 40, the veteran lefty completed a one-year deal worth $12 million, putting baseball's biggest postseason winner back in the Bronx.

"I think we're good enough to go all the way, I really do," Pettitte said on a conference call. "I'm at the point where, if I didn't feel like we had a chance to win it deep down, I wouldn't do this."

The five-time World Series champion retired after the 2010 season to spend more time at home but then decided to come back this year ? while working as an instructor during spring training ? and signed a contract guaranteeing him $2.5 million.

Pettitte went 5-4 with a 2.87 ERA in 12 starts. He missed almost three months because of a broken lower left leg, sustained when he was hit by a line drive off the bat of Cleveland's Casey Kotchman on June 27.

"I definitely think that if I would have pitched a full season and thrown 200 innings, that I definitely wouldn't feel as fresh and physically feel as good as I do right now," Pettitte said. "Obviously, I feel like that helped lead me to a quick decision."

The move means the AL East champs are set to start 2013 with the same rotation as last season: CC Sabathia, Hiroki Kuroda, Pettitte, Phil Hughes and Ivan Nova or David Phelps.

Next up for general manager Brian Cashman could be a contract for 43-year-old closer Mariano Rivera, determined to come back from a torn knee ligament.

Madson is making a comeback from Tommy John surgery, and he agreed to a one-year deal with the Los Angeles Angels five days before the start of baseball's winter meetings in Nashville, Tenn.

The longtime Philadelphia reliever missed last season with Cincinnati, which signed him in January after a stellar performance in 2011 with the Phillies. He had surgery in April on a torn ligament in his right elbow.

Well ahead of schedule in his recovery, Madson said he expects to be the Angels' closer. General manager Jerry Dipoto agreed the veteran is likely to supplant Ernesto Frieri when fully healthy.

"I feel like if I can throw the ball like I'm capable of, I expect to have that role," Madson said. "I expect to come to spring training and earn the job."

Broxton isn't sure what role he'll have in Cincinnati after securing a $21 million, three-year contract that gives the NL Central champions a chance to reconfigure their starting rotation.

The two-time All-Star came to the Reds last July in a trade with Kansas City. He filled in as the closer when Aroldis Chapman developed a tired shoulder and had four saves in six chances overall with a 2.82 ERA.

Now the Reds have the option of turning Chapman into a starter, which was the plan last season until Madson blew out his elbow. The team has told Chapman to prepare for next season as a starter, although it hasn't committed to Broxton as the closer.

"Nothing's in stone right now," assistant general manager Bob Miller said. "When we talked to Jonathan we said he was going to be at the back end of the bullpen. What happens depends on spring training and how things play out in the offseason."

Broxton wanted a multiyear deal so he could settle in one place. He didn't insist on assurances he'd be a closer.

"I went into the offseason with an open mind," Broxton said. "I've got experience in both roles. Even if Chapman doesn't work out as a starter, he can come back in and fill in as the closer. I'll be happy to throw the eighth (inning). It doesn't matter. You saw what he did last year."

The 28-year-old Upton hit .246 with 78 RBIs for the Rays last season. He will replace free agent Michael Bourn as the Braves' center fielder and should provide much-needed power from the right side.

Upton's first full season with Tampa Bay was 2007, when he hit a career-best .300 with 24 homers and 22 stolen bases. His home run totals have increased in each of the last three seasons, but he has hit below .250 with more than 150 strikeouts in four straight years.

Bourn was the Braves' leadoff hitter, but Upton is not expected to fill that role.

Elsewhere, the Boston Red Sox made a flurry of minor moves, trading right-handers Zach Stewart and Sandy Rosario as well as third baseman Danny Valencia.

Stewart was sent to Pittsburgh and Rosario to Oakland for players to be named. Valencia was shipped to Baltimore for cash.

Boston also hired Greg Colbrunn as hitting coach.

Athletics reliever Pat Neshek agreed to a one-year contract that avoided salary arbitration, while Kansas City traded right-hander Vin Mazzaro and first baseman Clint Robinson to the Pirates for minor league pitchers Luis Santos and Luis Rico.

The Chicago Cubs designated right-hander Casey Coleman for assignment to make roster room for newcomer Scott Feldman, who agreed to a $6 million, one-year contract the previous day.

Feldman's former team, the Texas Rangers, acquired right-hander Cory Burns from San Diego for a player to be named or cash.

Rick Warren, Saddleback Pastor: Obama Has 'Infringed' Upon ...

Saddleback Church founder and author Rick Warren, who once praised President Barack Obama's "courage" for inviting the conservative pastor to give the invocation at his inauguration and hailed his "commitment to model civility," has drastically changed his tone on the man who helped make him a familiar name to many Americans.

Obama is "absolutely" unfriendly to religion and his administration's policies have "intentionally infringed upon religious liberties," Warren said in an interview Wednesday. The evangelical pastor, whose 20,000-member church in suburban Los Angeles is one of the largest in the nation, was on tour in New York City to promote to the 10th anniversary edition of his popular book, "The Purpose Driven Life." He spoke in a wide-ranging conversation that touched upon his stance against same-sex marriage, his disappointment with the presidential campaigns, and the role of faith in an increasingly secular society.

Warren, who famously hosted Obama and former Republican presidential candidate Sen. John McCain at the Saddleback Civil Forum on the Presidency four years ago, said he was close to hosting a similar event this year that the Republican Party and the White House were interested in joining. The candidates never said publicly that they would attend. Warren canceled it, he said, because Obama and former Republican presidential candidate Mitt Romney were "talking stupid little issues" and "spending their time attacking each other" instead of presenting "a big vision."

"President Obama didn't have a lot to report on because it's been not a good four years, and Romney, I don't know what he was thinking, he could have presented a big vision. I never got it," Warren said.

He said he had re-published his book, which is written as a guide for readers about the purpose God has given them for their lives, in part to give solace to young Americans who can't find jobs and are seeking spiritual answers. Surveys have shown that Americans, particularly young adults, are becoming less interested in religion, but Warren said that didn't concern him. Young people, he said, will "go through life and say, 'I'm missing something,' and go back to the religion of their youth" when they get married and have kids, he said. But he added that Saddleback is nonetheless putting a special focus on forming young adult study groups and outreach to its younger members.

Since it didn't host the presidential candidates this year, Warren said the church will host the Saddleback Civil Forum on Religious Freedom in January. It will include Muslim and Jewish voices, but the only confirmed speaker is Cardinal Timothy Dolan, the Archbishop of New York and president of the U.S. Conference of Catholic Bishops. Dolan has been one of the strongest voices against Obama's health care legislation's contraception mandate: the requirement that religious institutions that aren't strictly for worship, including hospitals and schools, provide birth control with no co-pay as part of insurance plans. Warren, who said he has not recently spoken to Obama, predicted that "religious liberty will be the civil rights issue of the next decade."

Obama, who has been hailed in both his electoral wins for gaining support from a wide-range of religious voters, nonetheless had a quieter approach this year than four years ago in terms of overt religious outreach.

"The first time around, he was trying to become known ... When you are trying to make yourself known, so to speak, because you don't have a long track record, you probably will be more explicit about what you believe and the importance of certain things," said Joel Hunter, one of the president's spiritual advisers and the pastor of Northland, an evangelical megachurch near Orlando. "After you're president awhile, you realize everything gets blown out of proportion, you can't address religious topics very often. What happened is he engaged issues as a person of faith but he carefully avoided making it a political issue. What he proved by his actions and periodic pronouncements is that faith is a very important part of his life."

That includes the president's announcement that he supported gay marriage, a position with which Hunter disagreed. Obama invoked his Christian faith and the "Golden Rule" to explain his position, said Stephen Mansfield, author of "The Faith of Barack Obama."

The president has also taken a softer approach to religion on the world stage, according to some observers. "Take His Holiness the Dalai Lama, for example. Whenever the president meets him, the opposition and relationship with China is always on his mind. But they have a good chemistry," said Victor Chan, Founding Director of the Dalai Lama Center for Peace and Education in Vancouver. "And growing up in Indonesia, he knows Islam, and he has a close relationship with, for example, Aung San Suu Kyi, the Burmese opposition leader. I think personally, he embraces all the world's major religions."

A federal judge in Denver on Monday ordered the consolidation of seven lawsuits brought against the Cinemark theater chain by survivors and relatives of those killed in a shooting rampage in which 12 moviegoers were slain as they watched a Batman film.

US District Judge?R. Brooke Jackson?also set May 5, 2014, as the earliest start date that any of the personal injury and wrongful death claims against Cinemark could proceed to trial.

Merging the cases and setting a tentative calendar for the litigation came during the first court hearing stemming from civil suits accusing?Texas-based?Cinemark USA?Inc of lax theater security in connection with the July 20 massacre.

Twelve people were killed and 58 wounded when a gunman opened fire on Cinemark patrons in?Aurora,Colorado, during a midnight screening of "The Dark Knight Rises."

The suspect, 24-year-old former?neuroscience?graduate student?James Holmes, is charged with dozens of counts of murder and attempted murder. The criminal case against Holmes is in a preliminary stage with no trial date set. He has not yet entered a plea and defense lawyers have said in court that Holmes suffers from an unspecified mental illness.

Activists: Syrian rebels seize major dam in north

(AP) ? Syrian rebels on Monday captured a hydroelectric dam on the Euphrates River in the country's north after days of heavy fighting, seizing crates of ammunition from the government troops who were protecting the strategic facility in the latest battlefield success for opposition fighters, activists said.

Also Monday, activists said rebels and pro-government Kurdish gunmen struck a truce to end days of fighting in the northern town of Ras al-Ayn near the border with Turkey that opposition forces entered earlier this month.

The Britain-based Syrian Observatory for Human Rights said rebel fighters overran regime defenses and captured the Tishrin Dam, near the town of Manbij, before dawn on Monday. Observatory direction Rami Abdul-Rahman said the dam supplies several areas of Syria with electricity.

"This is a major blow to the regime," said Abdul-Rahman by telephone describing the dam as "strategic location" on the Euphrates, which flows from Turkey in the north through Syria and into Iraq.

The rebels have scored a series of hard-fought strategic advances recently. On Sunday, they captured a regime helicopter base outside Damascus before pulling back for fear of government airstrikes.

Syria's conflict started in March 2011 as an uprising against President Bashar Assad's regime, inspired by other Arab Spring revolts. It quickly morphed into a civil war that has since killed more than 40,000 people, according to activists.

Amateur videos posted online showed gunmen inside the dam's operations room as an employee sat in front of five screens speaking by telephone about the level of water behind the dam. Another video showed gunman in front of dozens of green wooden boxes apparently full of munitions.

A gunman opened one of the boxes showing that it contained hand grenades. "The Free Syrian Army has fully liberated the Tishrin Dam," one of the rebels could be heard saying.

The activist videos appeared genuine and corresponded to other AP reporting about the events depicted. Syria restricts the access of reporters.

Also Monday, Kurdish activist Mustafa Osso and the Observatory's Abdul-Rahman said the town of Ras al-Ayn has been quiet since Saturday after fighters from the government-leaning Kurdish Democratic Union Party, or PYD, reached an agreement on a truce with rebels, most of them from Islamist extremist groups, including the al-Qaida-inspired Jabhat al-Nusra.

The rebels entered the town earlier this month and have since clashed almost daily with PYD gunmen for control over the area. Both factions add to the complexity of Syria's conflict, which has taken on heavy sectarian ? and ethnic ? overtones.

The fighting in recent days has left dozens of people killed or wounded, and dozens captured on both sides. Osso and Abdul-Rahman said PYD forces and the rebels agreed to exchange prisoners and to withdraw their militiamen from the town.

Abdul-Rahman said the rival parties agreed to form a local council that will run day to day life in Ras al-Ayn. Osso said thousands of people who fled the town, which has a mixed population including Arabs, Kurds, Chechens and Christians, have started returning home.

A journalist in Ras al-Ayn told The Associated Press that the town has been calm since Saturday, adding that cars with PYD gunmen were seen in the streets with load speakers urging residents to return to their homes after the truce was reached. He added by telephone that parts of the town were heavily damaged by government air raids earlier this month.

When regime forces withdrew from Kurdish areas in northeastern Syria in July, they were quickly replaced by Kurdish fighters from PYD. Those forces then battled rebel fighters after they pushed their way into predominantly Kurdish areas. The Kurdish group is affiliated with the PKK, rebels fighting for autonomy in the Kurdish-dominated southeast region of Turkey.

The rebels, who Islamic militants, who are fighting on the side of the rebels, have played a bigger role in the Syrian conflict in recent months and many openly say they want to set up an Islamic state. The opposition is split, with some groups strongly opposed to the influence of extremists.

Finalists for the World Spa & Wellness Awards have now been announced. Armed with traditional Christmas ingredients, two restaurants face off to produce one naughty dish and one nice. Can a healthy meal be as tasty as a decadent one?

In an alleyway behind Back Lane Caf?, a narrow space strewn with parked cars, hardwood for a pizza oven, refuse bins and the occasional inquisitive cat, pastry chef Quinn Davis tugs on a cigarette as he and executive chef Michael Hay ponder the nuances of naughty and nice.
Of course, we all have our angelic side: Some people hold the door open for others; on a really good day they may not walk against a red light.

But when it comes to food, Davis, who is only 25 years old, considers himself mostly naughty, while for this assignment, the older and wiser Hay, 27, assumes the mantle of nice. With all its fat and decadence, naughty food most often tastes better than the low-cal stuff, yet in the right hands, healthy choices can be made tasty, too. It just takes a little more effort.

?I would definitely be a naughty person,? Quinn decides, dragging on his smoke.

?I enjoy real gluttony in life, in everything.?

No surprise, then, the boys at Back Lane (who put this together for us before Davis moved to Toronto in search of new adventures in November) seemed a perfect kitchen duo to explore the nuances of healthy versus indulgent in this culinary assignment when they were asked to create something naughty and something nice.

Joining them in the mission across town at Bistrofiftyfour at Amberwood Golf and Country Club in Stittsville, chef and co-owner Mandi Mimms, 26, accepts both sides of the challenge, offering two recipes ? one healthy and the other somewhat less so.

In all cases, chefs were asked to work with duck and aromatics, such as cloves or cinnamon, to toast the wintery holiday season soon upon us. Beyond that, they were left to their own creativity.

?I wanted to make my nice version healthy,? Mimms says, ?which is a challenge because duck is so, ah, fatty.

?So, for me duck confit cooked in fat was out of the question. It was fun to make cinnamon a focal point, where normally it isn?t, so I decided to use cinnamon sticks to smoke the duck. If you?re going to do duck, this is about as good for you as it gets.?

Hay, on the other hand, opted for low-fat consomm? in his nod to good health. ?Consomm? is nice because it?s the essence of purity,? Hay says.

?It?s like soup nirvana because you?re removing all the detritus, getting rid of everything except the truth, right? You?ve got nothing but clarity.?

As for Davis: On cue, he combined virtually every naughty ingredient he could imagine in his foie gras-frosted doughnuts served with home-made beery ice cream, featuring eggs, gobs of butter, whisky, sugar and, yes, even tobacco, to infuse the ridiculously rich sabayon sauce.

Among these deadly sins, he?s even got pride covered. It?s so darned delicious, he beams.

?When I thought of duck, I immediately came up with foie gras, so I incorporated that into my dish by making a foie-sting doughnut,? Davis laughs. ?It?s basically just sugar and fat, so it doesn?t get much better than that.

?Then I tried to add as much booze as I could. You?ve got alcohol, tobacco, fat, and pretty much all the ingredients that kill people. Ha, ha. It?s murderous. It?s the best foie gras doughnut in town, so that?s my pride talking. Someone else could come up with one, but it wouldn?t be as good.?

Although his lengthy recipe appears intimidating, Davis insists an ?ambitious? cook could make it at home. In this case, however, we broke out various elements so the foie gras frosting, beer ice cream, cranberry compote and even the dough can be made a day ahead. Even then, more tentative cooks may substitute quality chocolate-chip ice cream from the store, and leftover Thanksgiving cranberry sauce from the fridge.

As for the foie gras itself, Davis suggests searing it very briefly on a hot skillet, then removing it immediately to avoid overcooking ? even a few seconds too long on high heat will render the fat to an icky yellow puddle, leaving behind a shrivelled sliver of liver with the texture of beef jerky.

Again on the naughty agenda, Mimms says she took pains to create a duck dish that?s ?horrendously unhealthy.?

?I like the idea of using pink banana squash, which you may find at some farmers? markets, or you can substitute acorn squash,? she suggests.

?I think the butterscotch sauce is hilarious: it?s something I associate with the holidays. And butterscotch is not exactly health food.

?I also wanted spicy notes in the dish, so that?s the chili pepper in the potato shot-glass soup. And, rather than do something with alcohol, I chose spice and butter, so in this dish, it?s all cream, butter and flavour.?

Over on the side of angels, Hay says he was immediately confronted with the problem of ?getting rid of all that unhealthy duck fat.?

?So I gave all the fat to Quinn. What I got was a consomm?, lovingly skimmed so there?s nothing left but the essence. And it?s frugal.?

Given the choice, Mimms says she?d be hard-pressed to choose between extremes. ?I definitely had more fun with the naughty dish, which I think is what people like.

?When I came to Amberwood in the spring, I expected our golfing clientele would be looking for low-fat, healthy dishes, but I quickly discovered a lot of people value flavour over low-cal. So we use butter and brie ? brie cheese is a huge seller here on our pizzas, in omelets. We sell lots of smoked meat, fries, gravy. And we use a lot of dessert sauces.

?The fact is, people want to treat themselves. Even at home, when folks come over, I don?t make rabbit food. They want big taste, and we all know fat is flavour.?

Chalk one up for the naughty side.

Very Nice Duck Consomm?

Michael Hay, executive chef, Back Lane Caf?

Serves 6??

For the consomm? base:

5 pounds (2.25 kg) duck carcasses, cut/broken to 1-inch (2.5-cm) pieces

2 tablespoons (25 mL) rendered duck fat (from a butcher)

2 cups (500 mL) onion, sliced

1 cup (250 mL) carrots, diced

1/4 cup (50 mL) garlic, minced

1 cup (250 mL) celery, diced

1 cup (250 mL) leeks, white part only, diced

1/2 cup (125 mL) fresh gingerroot, peeled and minced

2 tablespoons (25 mL) tomato paste

1 cup (250 mL) dry shiitake mushrooms

12 Szechuan (or other) peppercorns

4 whole star anise

10 cups (2.5 L) chicken stock

??To clarify the consomm?:?

4 egg whites

1/2 cup (125 mL) ground chicken breast

1 cup (250 mL) mirepoix, small dice (mixture onion, ?carrot, celery)

1 teaspoon (5 mL) rice vinegar

To finish:

Dark soy sauce, season to taste

To garnish:?

Fresh shemiji mushrooms, sliced green onions and diced soft tofu

1.???? For the base consomm?, preheat oven to 375?F (190?C). In a shallow pan, with edges to prevent spills, roast duck bones in a single layer until golden brown, about 1 hour, turning bones every 15 minutes to ensure even browning.

2. ?? ?Melt duck fat in 4-quart (4-L) stock pot on medium heat and add onion, carrots, garlic, celery, leeks and ginger; saut? until they caramelize to golden colour, about 15 minutes. Add tomato paste and saut? another 5 minutes, then add dried mushrooms.

3. ?? ?Make a sachet by wrapping peppercorns and anise in a double-thickness of cheesecloth, ?tying end with butcher twine to secure, and add to pot. Cover with chicken stock and bring to low simmer over medium heat, skimming constantly to remove impurities that float to the surface.

4. ?? ?Reduce liquid to 6 cups (1.5 L), skimming frequently over 5 hours to remove fat and impurities, then strain through a fine sieve or chinoise.

5. ?? ?To finish the consomm?, in a separate bowl, whisk together egg whites, ground chicken, mirepoix and vinegar to combine well. Add ?this mixture to reduced stock and whisk ?thoroughly.

6. ?? ?Gradually increase heat, removing whisk. ?Do not disturb as the egg white mixture forms a ?raft? on the top that removes impurities. Keep consomm? at a gentle heat; raft will fully form in about 30 minutes.

7. ?? ?Create a small hole in the centre of the egg white raft using a small ladle; liquid under raft should be completely clear. Ladle out clear liquid through the hole, discard the raft, and filter consomm? through triple-layer of cheesecloth or coffee filter. Season to taste with dark soy sauce.

Very Naughty Foie Gras-Frosted Doughnuts with Tobacco Sabayon

Makes about 6 doughnuts??

This recipe has been simplified and broken into components, many of which can be made the day before. For simplicity, you may substitute quality ice cream in place of the pumpkin ale ice cream, and homemade cranberry sauce spiced with powdered cayenne pepper, to taste, instead of the cranberry compote.

For the brioche dough (make day before):

1 1/2 tablespoons (22 mL) honey

1/2 cup (125 mL) warm milk

1 teaspoon (5 mL) fast-rising granulated yeast

2 1/2 cups (625 mL) all-purpose flour, divided

1 teaspoon (5 mL) salt

1/4 cup (50 mL) butter, room temperature

1/4 cup (50 mL) duck fat, cool and cut into cubes, ?or substitute bacon drippings

3 eggs

For the pumpkin ale ice cream (make day before):?

2 cups (500 mL) sugar, divided

3 cups (750 mL) heavy 35-per-cent cream

9 egg yolks

2 1/3 cups (575 mL) Great Lakes Pumpkin Ale

1/2 teaspoon (2 mL) salt

2 cups (500 mL) shaved chocolate

??For the spiced cranberry compote (make day before):

5 1/4 ounces (150 g) peeled Granny Smith apples, diced small (about 2 apples)

7 ounces (200 g) cranberries (1/2 package)

1 2/3 cups (400 mL) sugar

4 cinnamon sticks

1/2 teaspoon (2 mL) ground nutmeg

1 lemon, juice only

1 tablespoon (15 mL) vanilla extract

1 teaspoon (5 mL) salt

2 bird?s-eye chilis, or substitute 1/2 habanero, ?not chopped

For the frosting (make day before):?

3 1/2 ounces (100 g) foie gras

1 cup (250 mL) granulated sugar, divided

1/3? cup (75 mL) water

4 egg whites

1 teaspoon (5 mL) cream of tartar

1 teaspoon (5 mL) vanilla extract

For the sabayon (make same day):

1/3? cup (75 mL) heavy 35-per-cent cream

1 tablespoon (15 mL) tobacco, from a cigar ?(not cigarette)

4 egg yolks

1/4 cup (50 mL) demerara, or brown sugar

2 tablespoons (25 mL) lemon juice

4 dashes cherry bitters (at better grocery stores or ?gourmet food shops)

2 tablespoons (25 mL) whisky

???For cinnamon sugar:?

1/4 cup (50 mL) granulated sugar

1 tablespoon (15 mL) ground cinnamon

??To make brioche dough for doughnuts:

1. ?? ?In a stand mixer bowl, dissolve honey in warm milk.? Add yeast, 2? 1/4?cups (550 mL) flour, salt, and knead on medium speed using dough hook until dough comes together. Add butter and duck fat, 1 tablespoon (15 mL) at a time, while mixing; mix 1 minute. Add eggs one at a time with motor running; beat to make a soft and sticky dough. Continue until dough is shiny and elastic and pulls away from the sides of the bowl, adding reserved flour as necessary.

2. ?? ?Set aside 1 hour, then cover and refrigerate overnight.

For the ice cream:

1. ?? ?In a large saucepan, combine half the sugar with the cream and bring just to simmer. In a mixing bowl, beat remaining sugar with egg yolks. Whisking constantly, slowly stream hot cream into the yolk mixture. Slowly heat cream-yolk mixture in a stainless steel bowl resting on a saucepan of simmering water (double boiler), stirring until mix thickens to coat the back of a spoon. Remove from heat and refrigerate.

2. ?? ?When cooled, whisk in pumpkin ale, salt; set aside 1 hour in the fridge, then churn the custard mixture in a household ice cream machine according to manufacturer?s directions, adding shaved chocolate halfway through the process. Freeze until needed.

To make the cranberry compote:?

1. ?? ?In a large saut? pan, place diced apples and cranberries in a preheated oven at 350?F (180?C) until soft, about 30 minutes.

2. ?? ?Put sugar in a large saucepan, and just barely cover with water. On medium-high heat, cook to caramelize to golden colour, until it reaches 300?F (150?C).

3. ?? ?Remove apples-cranberries from oven. Reduce stovetop heat to low and carefully spoon fruit into caramelized sugar; mix to incorporate well. Add cinnamon, nutmeg, lemon juice, vanilla, salt, chili pepper; cook about 15 minutes on low, then remove from heat. Discard chili pepper, allow to cool and store in refrigerator, covered, until needed.

To make frosting:

1. ?? ?In a heavy frypan, on high heat, quickly sear foie gras 30 seconds each side, then immediately transfer to a medium-sized mixing bowl to stop cooking. Mash the foie gras well with rendered fat from fry pan until very smooth; set aside.

2. ?? ?In a small saucepan, combine sugar and water on medium heat; mix to dissolve, raising temperature to 245?F (118?C).

3. ?? ?As it warms, in another bowl using an electric hand beater, whip egg whites with cream of tartar until soft peaks form, about 1 or 2 minutes.

4. ?? ?Slowly pour hot syrup into the egg mixture with electric beater running on high. Slowly beat in foie gras mixture, add vanilla extract and beat to combine; cool, then cover and refrigerate until needed.

For the tobacco sabayon:

1. In a small saucepan, gently heat cream until steaming, but not boiled; add tobacco and let steep until cool, then strain out and discard tobacco particles.

2. ?? ?Meanwhile, in a medium-sized stainless steel mixing bowl, whip egg yolks until light and fluffy, then set on top of another saucepan (double boiler) with 1 inch (2.5 cm) of simmering water to heat gently. Stir in brown sugar, lemon juice, cherry bitters, whisky and tobacco-infused cream. Continue whipping in bowl over simmering water until mixture reaches 170?F (77?C) ? mixture should have tripled in volume.

3. ?? ?Remove from heat source, transfer to a sink with 1 inch (2.5 cm) cold water, and continue whipping as it cools in the stainless steel bowl; set aside.

To make doughnuts:

1. ?? ?Roll brioche dough on a lightly floured surface to 3/4-inch (2-cm) thickness, then cut into rounds about 3 1/2 to 4 inches (10 cm) in diameter using the rim of a small soup bowl. Cut out doughnut holes in centre using the rim of ?a shot glass or other small cutter. Transfer doughnuts to wax paper-lined sheet, cover ?with a damp tea towel, and let rise at ?room temperature to double in thickness, about 1 hour.

2. ?? ?Using a deep-fryer appliance or large heavy pot with 1 1/2 inches (4 cm) of vegetable oil, heat ?oil to 400?F (200?C) and gently place doughnuts in oil to fry to golden brown, about 1 minute per side. Transfer to cooling rack for 30 seconds.

3. ?? ?Combine cinnamon sugar ingredients well and dust doughnuts.

To serve:?

1. Remove frosting from refrigerator about ?1 hour before using. With a spatula, frost doughnuts while still warm from frying.

2. To plate, spoon sabayon sauce on each plate ?(1 plate per doughnut). Place doughnut on ?sabayon, then spoon ice cream in hole ?topped with cranberry compote. (Or, spoon compote in hole with ice cream on top, as you prefer.)

Oh-So-Nice: Smoked Duck with ?Garlic and Cranberry Terrine, ?Squash and Wilted Spinach

Serves 2??

For the terrine:?

1/2 cup (125 mL) sweetened cranberry juice

1/4 cup (50 mL) orange juice

1 cup (250 mL) whole cranberries, halved

1 large bulb garlic, chopped fine

1 packet (1 tablespoon/15 mL) powdered gelatin

1/2 cup (125 mL) whole pecans, shelled

?For the duck:

2 duck legs, thigh attached

2 teaspoons (10 mL) kosher salt

1 teaspoon (5 mL) black peppercorns, cracked

1 cup (250 mL) hickory wood chips, soaked overnight

5 sticks cinnamon, smashed

??For the vegetables:?

1 sugarloaf squash (or acorn squash) about 3 inches ?(7 cm) in diameter and 6 inches (15 cm) long

2 tablespoons (25 mL) olive oil

1/2 cup (125 mL) dry white wine

2 cups (1 L) baby spinach leaves

1. ?? ?Prepare terrine ahead by simmering cranberry and orange juices, berries and garlic in 2-quart (2-L) saucepan. Remove from heat and allow to cool slightly, then sprinkle powdered gelatin over top, stirring to dissolve. Pour into small loaf pan lined with plastic food wrap and set in refrigerator 10 minutes, then sprinkle top with pecans. Refrigerate up to a day ahead, covered, until needed.

2. ?? ?For the duck, rub legs with salt, pepper. If you don?t have a smoker, create a smoking pouch by enclosing hickory chips and cinnamon sticks in triple-thickness of aluminum foil, perforated with a paring knife to allow smoke to escape.

3. ?? ?Use a smoker to smoke duck at 225?F (107?C) about 20 minutes; if using gas grill, place wood-foil packet on lit side of gas grill and duck on grate above non-lit side to smoke over indirect heat. Transfer duck to preheated oven at 375?F (190?C) another 10 minutes to medium doneness. Meat will still be a bit pink inside. Temperature of meat should be 165?F (74?C).

4. ?? ?For the vegetables, peel squash, remove core/seeds and slice into french-fry matchsticks, then toss with olive oil. Grill on each side on high heat about 1 minute.

5. ?? ?Just before serving, heat fry pan with a little olive oil and wine and saut? spinach on high heat until wilted, about 3 to 4 minutes.

6. ?? ?To serve, divide spinach between 2 plates and place in centre of each. Stack squash sticks to one side, then lean duck against spinach, and sliced terrine on opposite side of duck.

The Naughty Side, Duo Duck with ?Butterscotch, Lime Fizz, Squash ?Pur?e and Potato Shot

?Serves 2

??For the duck:

2 duck breasts

2 tablespoons (25 mL) kosher salt

2 tablespoons (25 mL) black peppercorns, cracked

2 teaspoons (10 mL) ground cinnamon

2 teaspoons (10 mL) allspice?1 teaspoon (5 mL) ground cloves

2 duck sausages

??For the butterscotch:?

2 cups (500 mL) sugar

1/2 cup (125 mL) water

1 teaspoon (5 mL) lemon juice

1/4 cup (50 mL) heavy 35-per-cent cream

3 large spoonfuls (40 mL) bacon drippings

For fizz garnish:?

2 teaspoons (10 mL) lime zest

2 teaspoons (10 mL) fresh mint, very finely chopped

1 packet pop rocks candy (about 2 tablespoons/25 mL)

For the vegetables:?

1 pink banana squash, about 2 1/2 lbs (1.1 kg), diced 1-inch (2.5-cm), or substitute acorn squash

1/2 cup (125 mL) heavy 35-per-cent cream

1/2 sprig fresh thyme, leaves only, chopped fine

Duck fat, reserved from frying

For the potato shot soup:?

1 tablespoon (15 mL) butter

1/2 cup (125 mL) sliced leek, white part only

2 teaspoons (10 mL) fresh sage, chopped

1 cherry bomb chili pepper, chopped fine (may substitute jalapeno)

2 large russet (baking) potatoes, peeled, boiled to tender and mashed well

1/2 cup (125 mL) heavy 35-per-cent cream

1. ?? ?For the duck breast, using sharp paring knife, cross-hatch fat (without penetrating meat). In a small bowl, combine salt, pepper, cinnamon, allspice and cloves and rub breasts well in mixture. Cover and cure overnight in refrigerator, or minimum 3 hours.

2. ?? ?Preheat heavy frypan on medium burner and, with 1 teaspoon (5 mL) of vegetable oil, place breast fat-side down to sear; cook to render fat and crispen skin, about 7 minutes, then transfer to oven-safe dish and bake with sausages at 350?F (180?C) about 7 minutes. Reserve duck fat. Remove duck, transfer duck to plate and tent with foil while sausage bakes an additional 5 minutes until done, internal temperature 165?F (74?C).

3. ?? ?For the duck butterscotch, in a saucepan add sugar, water and lemon juice on medium heat. Simmer about 10 minutes to caramelize to a dark brown colour, but not black. Remove from heat, then quickly whisk in cream and bacon drippings, being careful not to splatter ? because it is hot!

4. ?? ?For the fizz, in a small airtight container with lid, combine lime zest, mint and pop rocks. Set aside with lid on for an hour to infuse flavours.

5. ?? ?To make squash pur?e, roast squash cubes in preheated oven at 350?F (180?C) about 15 minutes, or until tender. While still hot, transfer to large mixing bowl and whip with cream, thyme and rendered duck fat from breast.

6. ?? ?To make the spicy potato shot, in a frypan with a little butter, saut? leek, sage; when softened, add finely chopped chili pepper, ?to taste, and saut? until well caramelized and golden in colour, then add potato and whisk in cream to soupy consistency.

7. ?? ?To plate, use a rectangular plate and spoon squash pur?e at one end and in the centre of the plate. On opposite end, place potato soup in shot glass. Place duck breast in the centre, on top of the squash, and place the sausage on the breast. Spoon butterscotch sauce on sausage and breast, then pop rock mixture ?as garnish around perimeter.

'I'll have a white wine with that steak' | Eats Blog

Willinda and Peter McCrea of Stony Hill Vineyard, doing their best imitation of "American Gothic," at Pappas Bros. Steakhouse. His parents founded Stony Hill, one of Napa's first vineyards.

Suggesting white wine with dry-aged prime steak might be the height of heresy in some circles, but bear with me. ?These are steak whites?. This is one of only two U.S. gewurztraminers I drink,? remarked Pappas Bros. Steakhouse, master sommelier and head wine honcho Barbara Werley as she poured glasses of the gewurztraminer at a dinner last month at where I was privileged to be a guest.

With that introduction, we were treated to a rare evening with one of the most esteemed couples in the Napa wine biz. No one of Screaming Eagle or Silver Oak ilk, but producers specializing in white wines and one of the first families to grow grapes in the famed appellation. I hesitate to call this a cult wine, except that it is highly idiosyncratic, has extremely limited and sought-after production, and fines to the beat of drummer so out of step with mainstream Napa winemaking as to be eccentric.

I?m speaking, of course, of Peter and Willinda McCrea of Stony Hill Vineyard. But before I tell you the family?s story, I?ll tell you what the McCreas did at the dinner. After a prelim of awesome food matches with Stony Hill?s riesling, gerwurztramier and chardonnays (2005 and 2007 magnums), Pappas executive chef James Johnson presented entrees with two small portions of dry-aged prime strip loin. One was sauced with bernaise, the other with lime hollandaise (pictured).

The McCreas celebrated 60 years of winemaking this year with the production of their first cabernet sauvignon. ?What we wanted to make,? says McCrea, ?was a lower-alcohol wine that was a food wine.? They made exactly 250 cases of the 2009, 10 of which were allocated to Texas. Call this the anti-Cal cab: beautifully balanced fruit and acidity (13.5 percent alcohol), absent the screaming, alcohol-on-steroids jamminess more common to California cabs. We ate it with the bernaise ? and bingo! With the less acidic sauce, it was a wonderful match. But you knew it would be.

We ate the other strip sirloin, the one with the lime hollandaise, with three vintages of chardonnay (2005, 2007, 2008) ? and bingo! It was heavenly with every vintage. Note that the McCreas make a leaner, more European-style chardonnay using neutral oak. ?If you like buttery chardonnay,? quipped McCrea, ?you?ve come to the wrong dinner.?

As much as we were primed to be believers, the white wine-steak match was still surprising. ?We did it just to prove that you can drink white wine with meat,? McCrea said. Werley added: ?A hint of salt and a hint of acid, and you can drink any white with beef.? Point taken.

Now for Stoney Hill?s back story.

Peter?s parents, Fred and Eleanor, bought the property on Spring Mountain above Napa Valley in 1943. ?It was a goat ranch,? says McCrea. He was 5, and his sister was 1. There was no electricity, no one to work the place, no equipment ? World War II was on, after all ? and darn few gas coupons to make the round trip from San Francisco, where his father worked. ?No phone, either,? says McCrea.

In 1948, the McCreas started planting grapes with help from the University of California: chardonnay, riesling and pinot blanc. There were 10 other wineries in Napa at the time. In 1951, they built the winery from the lumber used to frame the swimming pool. Still used today, it looks like an old barn. (I got to visit one year at the Napa Valley Wine Writers Symposium, where I had my first glorious mouthful of the riesling.) In 1952, they released their first vintage: 50 cases of chardonnay.

?In 1962, my father retired and moved to St. Helena full-time and planted 30 acres. We started making riesling and gewurztraminer, and those have been our staple wines for the last 60 years.,? says McCrea. Over that 60 years, they?ve had two winemakers, including the current one, Mike Chelini, who joined the team in 1973.

So that?s a slice of the Stony Hill legend. My favorite story of the Pappas evening was listening to the McCreas reminisce with their guests about making a vodka-like spirit when they were working in the oil business, stationed in Saudi Arabia. They couldn?t buy alcohol, so they had to improvise. ?We called it ?white.?? It was basically better than anything coming out of Appalachia.?

As you might guess, Stony Hill wines are hard to come by in Texas. You can order them from the winery. A few places, such as Pappas, have part of the Texas allocation. If you go to Pappas, ask chef Johnson to prepare some of that lime hollandaise so you can taste for yourself and ask Werley pick the Stony Hill Chardonnay for you. The combination of steak and hollandaise just makes the wine pop with fruit and liveliness.

Black Friday with the Kids : Ideas for Women Home and Family Blog


Today is the biggest?shopping?day of the year and if you are like many other parents you end up having to bring your children along with you. If it is at all possible leave the kids at home (maybe with a relative or one parent) while getting their gifts. If you?cannot?leave them at home here are few tips I have learned after years of shopping Black Friday with the kids.

  1. DON?T expect much from the kids. Getting up at 1 am is not something they enjoy so they are going to be ill at best.
  2. Be sure to plan meal time and bring a bag full of various snacks. Kids will need to eat and in the flurry of shopping don?t forget that.
  3. Have an emergency bag ready at all times. Have one bag that will get you through the day with your kids. It needs to be filled with diapers, formula, clean clothes, blankets, Gripe Water, sippy cups, bottles, and anything else that you must have. It can be left in the car and items transferred t smaller bag as you need them.
  4. Bring plenty of distractions. Portable dvd players or ipads are great. There are plenty of gadgets that allow you to strap these to strollers.
  5. Get a stroller. Even your kids love to walk a stroller will save your life this day. We use two actually, one of the kids and one for the bags!
